Classically trained chef Jacqui DeFreitas has joined Le Beaujolais

French restaurant team in Cirencester - and has already boosted the rustic France offerings with 16 new dishes, which will be offered in various menus in the months ahead.

Globetrotter Jacqui (44) has won praise for her culinary skills in Australia and New Zealand, Amsterdam and London, where she initially trained under Albert Roux at the
Connaught Hotel´s Roux restaurant. Before joining Le Beaujolais, she was a chef at the Mayfield Hotel in Crudwell. Jacqui is highly passionate about iconic rustic french food...and her great love is the creation of beautiful dishes from main courses to pastry.

New specialities to be introduced in the coming months include gratin Normandie ...a golden onion soup cooked with cider, finished with cream and served with a Gruyere crouton; red pepper souffle, two new moules dishes,a burger exclusive to Le Beaujolais`kitchen , sea bass en papillotte and Chateaubriand. Kiean Glynn, owner of Le Beaujolais in Castle Street, said:" Jacqui´s arrival has added another big plus to our team and we will be announcing others shortly, especially an apprentice to work under her".
